Ingredients
Waffle:
1can of chickpeasdrained and rinsed
3tablespoonschopped red onion
1clove garlicchopped
3Tbsplemon juice
2Tbsptahini
1tspcumin
1tsppaprika
1tspcoriander
2cubesfrozen parsleythawed (or 1/4 cup fresh parsley)
1/2tspGF baking powder
2TbspBob’s Red Mill Gluten Free All Purpose Baking Flour
salt and pepperto taste
1egg
Tomato Salad:
1cupcherry tomatoeshalved lengthwise
1/2cupsliced cucumberscut in half
2Tbspolive oil
1Tbspapple cider vinegar
Instructions
Preheat your waffle maker. Coat with avocado oil spray to prevent sticking.
Place the chickpeas and the rest of the waffle ingredients into a food processor. Pulse to combine until well mixed. Set aside.
Combine the tomato salad ingredients in a separate bowl and set aside.
Using a 1/4-cup measuring cup or equivalent ice cream scoop, place the falafel mixture into the 4 quadrants of the waffle maker. Cook until nicely brown (about 6 minutes).
Place two waffles onto each plate and top with the tomato salad.
